Tasting notes: the oil is characterized by an intense light green color with golden yellow nuances. On the palate, it is sweet and slightly spicy, with a subtle tomato aftertaste. This combination makes it perfect for those who prefer to avoid an overly spicy flavor. The aroma is delicate, ripe and rich, offering a balance in its roundness;

Production techniques: the olives come from internal olive groves, both from centuries-old trees and from traditional intensive systems. The harvest takes place using mechanical methods such as a tilting umbrella for the smaller trees and an olive harvester for the centuries-old ones. The oil extraction takes place through a two-phase continuous cycle system, followed by a natural decantation by decanting;

Storage and formats: the oil is stored inside the mill in special dedicated steel tanks. The sales formats are 0.750 lt, 0.500 lt and 0.250 lt non-refillable glass bottles or 5 lt and 3 lt cans;

We respect the traditional methods of olive harvesting, patiently supervising the ripening on the branches of our silvery olive trees. Prolonged maturation could alter the colour, consistency, aroma and organoleptic qualities of the olives. For this reason, we wait for the olives to reach a light pink color of the drupe. To keep all the characteristics of our organically grown olives unchanged, we strictly respect the grinding times, which takes place within a few hours of harvesting. This allows us to obtain an oil of maximum purity, of a beautiful straw yellow colour, with an inebriating aroma and a taste that preserves the characteristics of the olives used. The olives are pressed in our mill to guarantee a higher quality of the extra virgin olive oil produced on the farm;
